Recipe of the Quarter - Creole Chili Sauce

The Seychelles are known for their fiery chilies and you will find this Creole chili sauce in almost every home, as well as gracing the table at North Island. It packs a punch, but will leave you wanting more.
Ingredients (amounts can be roughly estimated):
- 20g Red Chili (preferably Bird's Eye)
- 40g Onion
- 40g Tomato
- 40g Bilimbi*
- 10g Garlic
- 15ml Olive oil
- 10ml Lemon juice
- Pinch of Salt
- Black pepper to taste
Method:
- Finely dice or blend the onion, tomato, bilimbi, garlic and red chili. Mix all diced ingredients together.
- Pour in the olive oil and lemon juice, stir and season with salt and pepper to taste.
- Bottle and keep the chili sauce in the fridge to chill.
*If you do not have access to bilimbi, a local ingredient, you can increase the amount of lemon juice in the recipe.
